Donut-crispy on the outside, full of peaches and cinnamon, then drizzled over with a sweet cream cheese glaze — these are awesome little mini-Bundt cakes.

And so easy to make. I totally got away with using only a whisk and a spatula.

I am not a hippie.

I may wear long skirts and have ridiculously long hair.

I may like patchouli and those thin green shoots of bamboo they sell at head shops. 

I may have homemade my babies’ food.

Maybe I even like Pink Floyd and a little reggae now and then.

But I am not a hippie.

However, I am starting to have a thing for the hippy-ish, eat-from-the-earth book that bore the recipe for this blueberry cornbread — “Edible: A Celebration of Local Foods.”

I’m actually reading this book. With two toddlers, reading is a rare occurrence relegated to very late weekend nights.

This apple cranberry crisp is not Pie’s poorer cousin. It is not the Lazy Man’s Pie. 

It is simply damn good.

Is it too late for cranberries? Apples? Cinnamon?

Never. Not in this kitchen.

I screwed this one up a little. I shorted the recipe by about a cup of peaches. I only had three cups of peaches, not four. So, I went with it.

It was still a good, spicey, peachy cobbler-like dessert. But the cake was…a little dry.

BUT — the first time I made this, I used three cups of peaches and one cup of blackberries and it was awesome, a keeper.
